Spicy mince rotis

 



Preparation Time: 15 minutes

Cook Time: 45 minutes

Serves: Serves 4 - 6

Perfect for those colder evenings.

Ingredients

Rotis

500ml (280 g) Snowflake cake flour

1ml salt

30ml cooking oil

250ml boiling water

45ml butter or margarine, melted

750ml cooking oil for frying

Mince Filling

30ml cooking oil

500g lean lamb or beef mince

1  medium onion, coarsely chopped

2  cloves garlic, crushed

12ml medium curry powder

2ml tumeric

8ml garam masala

125ml beef or chicken stock

1ml salt and freshly ground black pepper to taste

2  medium potatoes, peeled and cut into small cubes

30ml chopped fresh coriander (optional)

Method

  • Rotis: Sift flour and salt together. Combine oil and water. Add to dry ingredients and cut in with a knife. Knead lightly to a firm dough.
  • Roll out dough on a lightly floured surface into a rectangular shape of about 26 x 30 cm. Brush melted butter over dough and roll up like a Swiss roll (from the short side). Cover and leave to rest for about 15 minutes.
  • Cut roll into about 10 pieces. Roll out each piece on a lightly floured surface, to a round shape of about 20 cm in diameter. Heat a little oil in a medium, heavy-based frying pan. Fry rotis, one at a time, on both sides until golden brown. Keen warm while preparing filling.
  • Filling: Heat oil in a medium, heavy-based saucepan and fry mince until it changes colour. Add onion and garlic and sauté for a few minutes until soft. Add spices and fry for 1 minute.
  • Add stock, seasoning and potatoes and simmer for about 25 minutes. Fill rotis, roll up and serve.
